Healthy Pancakes: The 68 Cal Low Calorie Pancake Recipe

As we venture through our third national lockdown, we're all looking for small joys and things to do at home to keep morale high. One activity that has gotten us through the past two lockdowns is cooking. Whether we're trying our luck at banana bread and sourdough or being adventurous with cloud bread and TikTok baking trends, many of us have found solace in the kitchen.

That's why we're already counting down the days until Shrove Tuesday on February 16.

We're sure there will be a plethora of pancake recipe trends doing the rounds on social media and recipe blogs nearer the time but if you're looking for a really simple, healthy pancake recipe, we've got just that.

Nutracheck has shared a healthier pancake recipe which serves 10 people, and is 68 calories per serving (1.8g fat), making it the ideal recipe to choose whether you're trying to take a healthier approach to your diet or simply want to eat as many as you want without worrying.

Low Calorie Pancakes

Ingredients:

  • 115g plain flour

  • 2 x medium eggs

  • 300ml skimmed milk

  • 90 ml Water

  • Fry Light

  • Blueberries for décor

Method:

  • Combine the milk and a little bit of water in a jug.

  • Sift the flour into a bowl and make a well in the middle. Break the 2 eggs into it. Begin whisking the eggs incorporating the flour as you do so.

  • Gradually add the milk and water mixture, still whisking, until all the liquid has been added and you have formed a smooth batter.

  • Heat a frying pan over a high heat with 2-3 sprays of Fry Light until hot. Put 2 tbsp of batter into a ladle and add to the centre of the pan.

  • Check when edges become loose (about 20 seconds) and the batter has solidified, then with a pan slice, turn the pancake over and cook for a few more seconds.

  • Remove from pan onto a warm plate. Serve with a topping that fits your diet or make that bit your guilty pleasure (we won't tell).
